The potato is the most popular vegetable in the United States and the red variety is the most common vegetable grown in American gardens. Red potatoes are named for the rosy appearance of their skin. The flesh inside is firm and white. Red potatoes are often used as the primary ingredient for potato salads. They provide many health benefits to the consumer of this popular produce.
Vitamins and Minerals Red potatoes are a rich source of nutrients. One medium-sized potato contains 1.6 mg of Iron, 969 mg of potassium and 18 mg of vitamin C. Antioxidant Content Red potatoes contain high levels of antioxidants called anthocyanins. The red potato contains five times the level of antioxidants compared with the russet potato. The red potato’s antioxidant levels reduce by about half when the potatoes are fried for making chips and french fries, according to the U.S. Department of Agriculture. Baking reduced the red potato’s antioxidant levels by about 65 percent.
Nutritional Content Red potatoes contain high levels of protein. One medium-sized potato contains 4.03 g. Protein sources derived from vegetables replace higher fat sources that increase the risk of acquiring cardiovascular disease. The fiber content of a red potato is 3.6 g, approximately 15 percent of the Daily Value.
